Banana Date Bread
Ingredients:
- 1 cup whole wheat flour
- 1 cup white flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 fresh, grated nutmeg (or 1/4 teaspoon ground)
- 1 cup chopped, pitted dates
- 1 cup finely chopped walnuts
- 1/2 cup vegetable oil
- 1/2 cup honey
- 2 large eggs
- 1 cup mashed bananas
- 1 teaspoon vanilla extract
Directions:
- Combine flours, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg.
- Add dates and walnuts to flour mixture.
- In a separate bowl, beat together oil and honey until smooth.
- Add eggs, bananas, and vanilla to oil mixture.
- Combine the two mixtures just until blended. Do not overstir.
- Put the batter into a greased and floured loaf pan.
- Bake at 350 degrees for 60 to 70 minutes or until a knife inserted into the center of the loaf comes out clean. If the top gets too dark before it is done baking, cover with foil and continue baking.
