Cheddar Corn Muffins
I love cheese, and these homemade cheddar corn muffins are a real treat alongside chili or ham 'n' beans! If you prefer a more traditional corn muffin recipe, simply leave out the cheese. In a pinch, you can even use Jiffy Corn Muffin mix and add the cheese to that and it will turn out almost as good.
Cheddar Corn Muffins
Ingredients:
- 1 cup white flour
- 1 cup yellow cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar
- 1 large egg
- 1 cup milk
- 4 tablespoons melted unsalted butter
- 1-1/4 cups grated extra-sharp Cheddar cheese
Directions:
- Combine flour, cornmeal, baking powder, salt, and sugar.
- In a separate bowl, beat egg.
- Add milk and butter to the beaten egg.
- Combine the two mixtures just until blended. Do not overstir.
- Add one cup of cheese.
- Put the batter into greased muffin pans.
- Sprinkle the remaining cheese on top of muffins.
- Bake at 425 degrees for 17 minutes.
