Cheddar Corn Muffins

   I love cheese, and these homemade cheddar corn muffins are a real treat alongside chili or ham 'n' beans! If you prefer a more traditional corn muffin recipe, simply leave out the cheese. In a pinch, you can even use Jiffy Corn Muffin mix and add the cheese to that and it will turn out almost as good.


Cheddar Corn Muffins

Ingredients:

Directions:

  1. Combine flour, cornmeal, baking powder, salt, and sugar.
  2. In a separate bowl, beat egg.
  3. Add milk and butter to the beaten egg.
  4. Combine the two mixtures just until blended. Do not overstir.
  5. Add one cup of cheese.
  6. Put the batter into greased muffin pans.
  7. Sprinkle the remaining cheese on top of muffins.
  8. Bake at 425 degrees for 17 minutes.
