Honey Citrus Baked Salmon

This dish is sooo easy and quick to make, it's unbelievable. And it's healthy--it's not fried! A friend who was on a low-fat diet because of gallstones could eat this. This recipe works great in a toaster oven! I like to have cooked white rice with this and then use a litte of the sauce from the salmon to flavor the rice. A can of asparagus or baked beans make a good quick vegetable.

Ingredients:
4 6 to 8 Oz. fillets salmon
4 to 5 tablespoons honey
3 tablespoons lemon or lime juice
2 tablespoons orange juice
Sea salt to taste
Olive oil to grease the baking dish

Directions:
1. Grease the baking dish with a little olive oil on a paper towel. Arrange the salmon fillets in a single layer. It's OK if the thin parts overlap a little bit.

2. Combine the honey, juice, and sea salt in a small bowl. Since lemon juice is stronger than lime juice, I like to use more honey if I'm using that.

3. Spoon the mixture evenly over the fish. When there is just a little sauce left, turn the fillets over and pour the remaining mixture over the other side. This way the fish gets evenly coated on all sides and will say tender.

4. Bake uncovered in a preheated 400 degree F oven for 10 to 15 minutes. The fish is dne when it flakes easily with a fork.
