Molasses Bread
This is a highly nutritious bread. It goes well with coffee for breakfast, and I enjoy it for snacks too.
Molasses Bread
Ingredients:
- 2 cups whole wheat flour
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1-1/2 teaspoons caraway seeds
- 3/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk or plain yogurt
- 1/2 cup molasses
- 1/4 cup vegetable oil
Directions:
- Combine flour, baking powder, baking soda, caraway seeds, and salt.
- In a separate bowl, Beat egg.
- Add buttermilk or yogurt, oil, and molasses to the egg.
- Combine the two mixtures just until blended. Do not overstir.
- Put batter in a greased loaf pan.
- Bake at 350 degrees for 40 minutes or until a knife inserted into the center of the loaf comes out dry.
