Breaded Parmesan tilapia
Ingredients:
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 6-ounce fillets tilapia, red snapper, or grouper
- 1 cup dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil (or 1/2 teaspoon dried)
- 4 teaspoons olive oil
Directions:
- Arrange fish in a single layer in a small, shallow baking dish.
- Combine lemon juice, oil, salt and pepper.
- Pour oil mixture over the fish, turning fillets to coat thoroughly.
- Combine all remaining ingredients to make breading.
- Sprinkle breading over fish and press on.
- Bake at 400 degrees for 10 to 12 minutes or until crumbs are golden and fish flakes easily with a fork.
- Serve with tartar sauce.
