Stuffed Mushrooms
Ingredients:
- 12 large fresh mushrooms
- 3 tablespoons butter
- 2 garlic cloves, pressed
- 1 small onion, minced
- 4 slices good-quality white bread
- 2 tablespoons fresh parsley, minced
- 3 tablespoons dry sherry
- 1/2 teaspoon dry thyme
- 1/4 teaspoon poultry seasoning
- 1/4 teaspoon salt
- Pepper to taste
Directions:
- Snap off stems of mushrooms and mince them.
- Melt 2 tablespoons of butter in a medium skillet over medium heat.
- Add onion and garlic and sauté 10 minutes.
- Add mushroom stems and sauté 5 minutes more.
- Toast bread slices until golden, then crumble into skillet.
- Stir in seasonings.
- Place a piece of butter from remaining tablespoon inside each mushroom cap.
- Stuff with bread mixture, press in and mound.
- Arrange stuffed mushrooms in a buttered pie plate.
- Bake at 350 degrees for 45 minutes or until brown and tender.
