Zucchini Bread
Zucchini Bread
Ingredients:
- 2 cups sugar
- 3 eggs
- 2 cups grated zucchini
- 3 teaspoons vanilla
- 1 cup vegetable oil
- 3 cups white flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 teaspoons ground cinnamon
- 1/4 teaspoon baking powder
- 1 cup nuts, chopped
Directions:
- Combine sugar, eggs, zucchini, vanilla, and oil.
- In a separate bowl, combine flour, salt, cinnamon, baking soda and baking powder.
- Combine the two mixtures and stir just until blended. Do not overstir!
>li> Add one cup of chopped nuts, if desired.
- Pour batter into two greased loaf pans.
- Bake at 325 degrees for one hour or until a knife inserted into the center of loaves comes out clean.
